Singapore Noodles

Ingredients

  • 2 Eggs
  • 1 Onion
  • 2 tablespoons Curry powder
  • 200 g Rice vermicelli noodles
  • 200 g Prawns
  • 200 g Char siu
  • 1 Capsicum
  • 2 tablespoons Soy sauce

Instructions

    Cook the noodles according to packet directions. Drain.

    Heat oil in a wok or large frying pan over high heat. Add the prawns and cook until pink. Remove from the wok.

    Add the onion and capsicum and stir-fry for 2-3 minutes.

    Push the vegetables to one side and pour in the eggs. Scramble the eggs, then mix with the vegetables.

    Add the noodles, prawns, char siu, curry powder and soy sauce to the wok.

    Stir-fry for 2-3 minutes, until everything is heated through and well combined.

    Serve immediately.
