Ingredients

  • 1/4 cup Olive oil
  • 1 Red onion
  • 1 Zucchini
  • 1 Red capsicum
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 500 g Chicken breast
  • 1 Green capsicum

Instructions

    In a bowl, combine the chicken, vegetables, olive oil, lemon juice and oregano. Marinate for at least 30 minutes.

    Thread the chicken and vegetables onto skewers.

    Preheat a BBQ or grill to medium-high.

    Cook the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.

    Serve immediately.
