Kangaroo Steak with Red Wine Jus

Ingredients

  • 1 tablespoon Olive oil
  • 1 tablespoon Butter
  • 1 cup Beef stock
  • 1/2 cup Red wine
  • 2 Kangaroo steaks
  • 1 For the red wine jus:

    Season the kangaroo steaks with salt and pepper.

    Heat olive oil in a frying pan over high heat. Cook the steaks for 2-3 minutes each side for rare, as kangaroo is best served this way.

    Remove the steaks from the pan and rest.

    For the jus, deglaze the pan with red wine, scraping up any browned bits. Cook until the wine has reduced by half.

    Add the beef stock and simmer until the sauce has thickened.

    Whisk in the butter.

    Slice the kangaroo steaks and serve with the red wine jus.
