Roast Lamb with Mint Sauce

Ingredients

  • 2 tablespoons Olive oil
  • 1 tablespoon Caster sugar
  • 4 cloves Garlic
  • 1.5 kg Leg of lamb
  • 2 sprigs Rosemary
  • 1 For the mint sauce:
  • 1 cup Fresh mint leaves
  • 1/2 cup Boiling water
  • 1/4 cup White wine vinegar

Instructions

    Preheat oven to 180°C.

    Make small incisions in the lamb and insert the garlic slices and rosemary sprigs.

    Rub the lamb with olive oil and season with salt and pepper.

    Place in a roasting pan and roast for 1.5 hours for medium, or until cooked to your liking.

    For the mint sauce, combine the mint and sugar in a bowl. Add the boiling water and stir to dissolve the sugar. Stir in the vinegar. Set aside.

    Rest the lamb for 15 minutes before carving. Serve with mint sauce.
