Ingredients
- 200 g Feta cheese
- 1/2 cup Olive oil
- 2 Eggs
- 500 g Spinach
- 1/2 cup Ricotta cheese
- 1/4 cup Chopped dill
- 1/4 cup Chopped parsley
- 10 Sheets of filo pastry
Instructions

Preheat oven to 180°C. Grease a 20cm square baking dish.

Wilt the spinach in a dry pan. Squeeze out as much liquid as possible.

In a bowl, combine the spinach, feta, ricotta, dill, parsley and eggs.

Lay one sheet of filo pastry in the prepared dish, brushing with olive oil. Repeat with 4 more sheets, brushing each with oil.

Spread the spinach mixture over the pastry.

Top with the remaining 5 sheets of filo, brushing each with oil.

Tuck in the edges and score the top into portions.

Bake for 30-40 minutes, until golden and crisp.
