Thai Green Curry with Chicken

Ingredients
- 500 g Chicken breast
- 2 tablespoons Green curry paste
- 400 ml Can coconut milk
- 1 cup Chicken stock
- 1 cup Mixed vegetables (e.g. green beans
- 1 tablespoon Fish sauce
- 1 teaspoon Sugar
- 1 Fresh basil leaves
- 1 Steamed rice
Instructions

Heat a little oil in a wok or large frying pan over medium-high heat. Add the curry paste and cook for 1 minute, until fragrant.

Add the chicken and cook until browned.

Stir in the coconut milk and chicken stock. Bring to a simmer.

Add the vegetables and cook for 5-7 minutes, until tender.

Stir in the fish sauce and sugar.

Serve the curry with steamed rice and fresh basil leaves.
