Pumpkin Soup

Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion
  • 4 cups Vegetable stock
  • 1 kg Pumpkin
  • 2 cloves Garlic
  • 1/2 cup Cream

Instructions

    Heat olive oil in a large saucepan over medium heat. Cook the onion and garlic until soft.

    Add the pumpkin and cook for 5 minutes.

    Add the vegetable stock and bring to the boil. Reduce heat and simmer for 20 minutes, or until the pumpkin is tender.

    Remove from heat and allow to cool slightly. Blend the soup until smooth.

    Return the soup to the pan and stir in the cream. Heat through gently, without boiling.

    Season with salt and pepper and serve.
