Quinoa Salad with Roasted Vegetables and Lemon Dressing

Ingredients

  • 2 tablespoons Olive oil
  • 1 Red onion
  • 1 Zucchini
  • 1 cup Quinoa
  • 2 cups Vegetable stock
  • 1 Sweet potato
  • 1 Red capsicum
  • 1 For the dressing:
  • 1/4 cup Lemon juice
  • 1 teaspoon Dijon mustard

Instructions

    Preheat oven to 200°C. Toss the vegetables with olive oil and roast for 20-25 minutes, until tender and lightly browned.

    Meanwhile, cook the quinoa in vegetable stock according to packet directions. Fluff with a fork.

    For the dressing, whisk together all ingredients in a small bowl.

    In a large bowl, combine the cooked quinoa, roasted vegetables and dressing. Toss to combine.

    Serve warm or at room temperature.
