Ingredients

- 2 cups Leftover mashed potatoes
- 1 cup Leftover cooked vegetables (e.g. cabbage
- 1/2 Onion
Instructions

In a bowl, combine the mashed potatoes, cooked vegetables and onion. Season with salt and pepper.

Divide the mixture into 4 portions and shape into patties.

Heat olive oil in a large frying pan over medium-high heat.

Cook the patties for 4-5 minutes each side, until golden brown and heated through.

Serve hot, with a fried egg on top if desired.
