Ingredients

  • 2 Eggs
  • 1 3/4 cups Self-raising flour
  • 1/2 cup Caster sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Cinnamon
  • 1/3 cup Vegetable oil
  • 3 Ripe bananas

Instructions

    Preheat oven to 180°C. Grease and line a loaf pan.

    In a large bowl, combine flour, sugar, baking powder and cinnamon.

    In a separate bowl, combine eggs, oil and mashed bananas.

  4. 4

    Pour the wet ingredients into the dry ingredients and mix until just combined.

    Pour the batter into the prepared pan.

    Bake for 50-60 minutes, or until a skewer inserted into the centre comes out clean.

    Let it cool in the pan for 10 minutes before turning onto a wire rack to cool completely.
