Corn Fritters with Bacon and Avocado Salsa

Ingredients

  • 4 Bacon rashers
  • 2 Eggs
  • 1/2 cup Milk
  • 1 cup Self-raising flour
  • 410 g Can corn kernels
  • 1 For the avocado salsa:
  • 1 Avocado
  • 1/2 Red onion
  • 1 Tomato
  • 1 tablespoon Lime juice

Instructions

    For the salsa, combine all ingredients in a bowl. Set aside.

    For the fritters, whisk together flour, milk and eggs in a bowl until smooth. Stir in the corn.

    Heat a little oil in a non-stick frying pan over medium heat. Spoon 2 tablespoons of batter for each fritter and cook for 2-3 minutes each side, until golden.

    Serve fritters topped with avocado salsa and chopped bacon.
